Ok, here it is. If you freeze leftovers for future use, be sure to leave a 1" to 1 1/2" head space (air space) at the top of the jar.  I usually place the liftovers in quart mason jars, then cool in the fridge, then reopen the jars to equalize air and then place in the freezer.  Once I didn't leave enough air space at the top and every jar cracked when the liquid expanded. 


I'm trying to convert my recipes to easier measurements for food storage; such as 1 poundof white beans equals 2 1/2 cups.  I did the beans, but next time I'm going to find the amount of dried onions to replace one fresh onion.


Ham bones usually come two or three to a package.  Use one and freeze the others individually in a vaccum sealed bag.


 


Congressional Bean Soup


As served in the cafeteria of our nations capitol


 


 


 


1 lb (about 2 ½ c) dried Navy beans or Great Northern or white beans


8 cups water


1 meaty ham bone or 2 cups diced cooked ham


1 cup finely chopped celery (or 2 ribs including tops)


1 onion finely chopped


2 tbs. finely chopped parsley (I use dried parsley)


1 tsp salt


¼ tsp pepper


3 large bay leaves


 


Combine all ingredients and cook in a crock pot for 8-10 hours or until beans are soft.   Start on high heat and reduce to low heat 


 


Remove bay leaves and ham bone. Cut meat off bone meat and return meat to crock pot.


 


Serve hot


 


Makes 6-8 servings


 


 


Serve with corn bread or biscuits.

No I don't know Pat & Don Barr, I live in Northern California.


I have another recipe that I will send you this week.  It's called "Congressional Navy Bean Soup" because it is served in the congressional dining room in DC. 


I consider it a winter dinner because it's soup.  It is one of those meals that can be thrown into a crock pot in the morning and by dinner times it's ready to go.  There only two of us at home now and it makes enough to feed 8, so we just use mason jars and freeze the remainder in 3 one quart mason jars and use it for dinners later by just thawing and microwaving.  It can be made mostly from food storage and is very expensive

Ill try them out and Ill be on the look out for a 1968 Betty Crocker Cookbook.  I think I can find one at the flea market.

Hey by any chance do you know Pat and Don Barr?  They live in Utah.  They are my cousins.  Real sweet people.  They are Mormons.  Just wondered.

Sorry it has taken me so long to get back to you, been busy with meetings and all.  The 1969 version of Betty Crocker Cookbook has recipes that came before most of the prepared foods.  We lost ours in a recent remodel and my son was able to find a used copy on E-bay or Amazon.


Here is the recipe for pancakes:


1 egg, 1 cup buttermilk, 2 tbls melted shortening or cooking oil, 1 cup flour, 1 tsp sugar, 1 tsp baking powder, 1/2 tsp soda (soda powder), 1/2 tsp salt.


Beat egg; add remaing ingredients in order listed and beat with rotary mixer (how old is that term?), until smooth.  Heat and greese griddle. To test griddle, sprinkle water on griddle and if the bubbles dance around the heat is just right.


Pour batter on griddle to make size of pancakes desired.  Turn pancakes as soon as they fluff and bubbles form, but before bubbles break.  Bake on other side until golden brown.  Makes ten 4-inch pancakes.


Variations:


APPLE PANCAKES: Decrease buttermilk to 1/2 cup and add 1/2 cup apple sauce.


CORNMEAL PANCAKES: Decrease flour to 1/2 cup and add 1/2 cup cornmeal.


I havent tried the following but they sound good.


HAM PANCAKES: Omit sugar and stir in 1/3 to 1/2 cup ground or chopped ham into batter.


POLKA DOT PANCAKES: Omit sugar. Cut 3-4 hot dogs into 1/8 inch slices and arrange groups of 6 on the griddle, pour batter over the slices.


This may become one of my favorites since I consider hot dogs as one of natures most perfect foods.
