Squash Soup

Trying to find a way to use up all that wonderful zucchini or 'excess' squash?

We made squash soup last night and it was delicious.  It was also very fast and easy.  Just thought I'd share. . .

3-4 squash (we used 1 zucchini and 3 summer squash)  sliced

2 c. water

2 chicken bouillon

salt and pepper to taste

Simmer together until soft (10-15 min.)  Then, mash or blend as desired.

Add milk or cream to taste.

It was delicious!  The kids even loved it!!!
