I am now declaring it National Chicken Breast and Lettuce Day.

Aw, I'm touched!

I just made a marinade of apple cider vinegar, liquid aminos (healthy sub for soy sauce), lots of garlic powder, ginger powder, basil, and stevia. Cooked my chicken in it and it was so good it felt like it should be off-limits. It was great on top of a bunch of lettuce with a little lemon squeezed over it.

I love the Bragg's brand of liquid aminos instead of soy sauce. Sounds yummy Eowyn.

My not as healthy recipe: This can be done in a slow cooker or the oven. 6 - 8 chicken breasts or the equivalent in chicken tenders. 2 cans Campbell's Golden Mushroom Soup. 1 pkg Lipton Onion Soup mix. 1 soup can of water. Place all ingredients in crockpot or casserole dish with a lid. In the Crockpot I cook it on high for 4-6 hours. In the oven I cook it at 350 degrees for 2-4 hours.

Serve over cooked rice or noodles.

Optional: Add a can of mushrooms or fresh mushrooms.


(The original recipe from my mom called for 1 can golden mushroom soup and 1 can french onion soup. I can never find french onion soup in a can so I adjusted for the dry soup mix.)

This is one of my families favorites and its super easy for Fast Sunday.


EDIT: Beef stew meat chunks can be substituted for the chicken. Its yummy both ways.

Braggs is what I have. I was skeptical at first, but I really like it. I'm liking stevia a lot, too. Of course I can't use it to bake, but I'm not really eating carbs right now, anyway. It's been great for smoothies, lemonade, and marinades, on top of being a sweetener for herbal tea.

I've made something like that. When I go back to "regular" cooking, I'll have to try it again! Or maybe I'll just make it for my family anyway. They're still getting the normal food. Yesterday hubby made my favorite dinner that he makes and the kids made cookies. that was a rough day. lol

That was sweet of them but dang!

What diet are you on? or are you just making changes?

I'm eating clean for awhile: lean protein, veggies, limited fruit, herbal tea, tons of water. Then I'll switch to Weight Watchers long-term, because that's what works really well for me. It keeps me in check with the junk, but I can still have some!

Thanks! Your mind has to be in the right place for sure. It's taken a long time to get mine there.

Weight Watchers really is the easiest and most sustainable change for me. I lost 25 pounds over about 4 months a few years ago and I've kept most of it off. Then I had twins, and still kept most of it off (post-pregnancy), but I need to lose the rest. I'm also feeling years and unhealthy living catching up with me and I want to be in good shape and able to do fun things with my kids, confidently, and maintain that health so that I can do fun things with my grandkids, too.

I understand. I've found for me its more than just what I eat but exercise too. That's the hardest part for me. It hurts to move. The 2nd hardest part is I have to get off the diet soda. Its got to go!

How old are your twins now?
