Is there any way to not show what country you are from?

I looked in the profile but couldnt find it, tried to look through a few pages here as well, but all 23 was a bit much....

There is not. Once you put it in, you can't take it out. Let me send this to our tech people and see if they can add a blank option in the drop down menu.
