Default LDS Budget?

I need the number of the % the church spends on education. Is there a way I can get these numbers?

No. The most the Church ever releases to the public about their finances is the yearly Church Auditing Department report. Anything above that is kept confidential.

You maybe able to find some informaiton from Canada. IIRC, the church transferred a very significant amount to BYU last year from Canadian tithing funds. The church is required to report finances in Canada and parts of Europe, but Little Wyvery is right, you won't find the information you are looking for anywhere.

Maybe at the federal level, but I think state governments typically spend upwards of 30% on education.

I wish the Department of Education at the Federal level would taken a part, disbanded. In my opinion it is too much power to give an education curriculum from the Federal level. Give the power back to the states.
