Mint fun
Extra rich mint cupcakes

1 small container plain or vanilla yogurt
1/2 c. margarine
1c. sugar
Cream these together in bowl

2eggs
1t. baking soday
2 1/2 c. flour
1/2 t. vanilla
1 drop spearmint oil.

Add the rest of these ingredients, mix well, then put into greased cake pan, or muffin wraps for cupcakes.

bake 350 for about fourty five minutes or until done.  (Adjust time as needed for cupcakes, usually takes about a half hour, but varies from oven to oven.)

Frost with cream cheese frosting, or white vanilla frosting when cool.
Serve and enjoy.

Mint suckers

2c. sugar
1c water
2/3 c. corn syrup
1/2 t. spearmint flavor
food coloring to desired shade

Combine first three ingredients in saucepan and boil until hard crack stage (300 degrees on the candymometer, you can get these at most places that sell cooking supplies)  remove from heat and add coloring and flavoring. Stir two to three minutes until it begins to thicken.  pour into greased molds or into greased metal cookie cutter shapes on a greased cake or cookie pan.  Let cool and enjoy your treats.

Mint party mints.

(This is for all you who ever wondered why these tasted like pure sugar!)

1 bar of butter
1 package of powdered sugar
Food coloring
1/4 t. mint flavoring
granulated sugar



Mix the butter with powdered sugar until it thickens starts to feel like play dough. add the color and the flavoring and mix well.  If you want to be fancy you can press this mix into a mold then dust with the granulated sugar, or you can also pipe this mix through a frosting tip to make stars and other shapes with this then dust them.  These are made as party favors at weddings all the time.  Enjoy!
